Mid’s Turkey Chili
2 Tbsp. Olive Oil
1 yellow onion, diced
1 package ground turkey
1 1/2 bell peppers cut into chunks
1 (32 oz.) jar Mid’s meatless pasta sauce if available (can use meat sauce)
2 Tbsp. tomato paste
2 (15 oz.) cans diced and seasoned tomatoes
1 (28 oz.) can chopped peeled tomatoes
1 (15.5 oz.) can dark kidney beans, drained
1 (15.5 oz.) can light kidney beans, drained
1 tsp. chili powder
1/2 tsp. cumin
1/8 tsp. cayenne pepper
3 cloves chopped garlic
garnish – grated cheddar or Monterrey jack cheese, sour cream
In a large stock pot over medium heat add olive oil. Saute the diced onion for 5-7 minutes or until tender. Add chopped garlic and ground turkey meat. Cook for 5 minutes over medium heat. Add pepper chunks. Season with salt and pepper. Cook until meat is done. Add pasta sauce, and
kidney beans. Bring to a boil. Simmer for 25 minutes to 2 hours. Add chili powder, cumin, and cayenne pepper.
I made this chili yesterday. I used fresh tomato chunks instead of canned. I bought tomatoes at the farm market. It was delicious. You could substitute your favorite meat sauce if Mid’s is not available in your area. Enjoy!
